Energy bites are one of my favorite snacks to take on vacations and road trips. This recipe adds the tartness of cherries and protein from walnuts and oats to keep me going on the trail.
Cherry Walnut Energy Bites
By Inspired by the Seasons
1 c dried tart cherries
3/4 c walnuts
1/2 c oats
2 T honey
1/2 tsp vanilla
Add above ingredients to a food processor and run until it becomes a coarse mixture. See photo below
Roll into balls, will make about 15.
