Slow-Cooker Sweet Potato and White Bean Soup

Our final CSA share of the season included sweet potatoes and happened to coincide with a fall cold snap - out came the crockpot and a new recipe was created. I like how the slow-cooker keeps the flavors of garlic and ginger bright. I find that when I make stovetop soups, some of those flavors get lost.

Slow-Cooker Sweet Potato Soup with White Beans

  • 1 cup sweet onion, diced

  • 4 cloves of garlic, minced

  • 1 T minced fresh ginger root

  • 4 c vegetable broth

  • 6 c diced sweet potatoes - about 3 10” long potatoes

  • 2 cans Northern white beans - I used one can for a soupier consistency

  • 1/2 tsp salt

  • 1/4 tsp freshly ground black pepper

  • 1/4 tsp cayenne powder or to taste

  • 1/2 tsp chili powder


    Put all ingredients in a Crockpot and set it for 6 hours on low. Blend with immersion blender until smooth.

    For a creamy finish add a dollop of sour cream to the bottom of the bowl before serviing and top with pepitas.
