Spicy Sweet Potato Bake

I adjusted my sweet potato recipe that bakes up in a muffin tin to work in an 8”x8” baking dish. This is simpler although the presentation on the first version is a bit cuter.

  • 2 1/2 c grated sweet potato, about one medium sized potato

  • 6 eggs

  • 1/4 c milk

  • 3 sliced green onions

  • 2/3 c grated pepper jack cheese

  • 1 1/2 tsp cumin powder

  • 1/4 tsp salt & pepper to taste

Preheat oven to 375 degrees

Grease an 8”x 8” baking dish

In order, add the grated sweet potatoes, cheese and green onions to the prepared dish.

Whisk the eggs, milk and spices together in a medium sized bowl.  Pour egg mixture over the prepared dish and using a fork, stir carefully until combined.

Cover with foil and bake for 20 minutes. Uncover and bake an additional 15 minutes until golden brown and the eggs are set.
