This is a fast, no bake breakfast to take to work that can also be used for an after school snack on top of a banana slice topped off with chopped pistachios. I did not use any sugar additive like in the recipe I found from Amy's Healthy Baking, adding sliced bananas and using vanilla yogurt instead of plain, gave it all the sweetness I needed. January happens to be National Oatmeal month, go forth and celebrate!
Chocolate Overnight Oatmeal Banana Bites
Adapted from Amy's Healthy Baking
1/4 c old fashioned oats
1/2 c vanilla Greek yogurt
1/4 c milk
1 T & 1 tsp cocoa powder
1 banana sliced
2 T chopped pistachios for snack topping
1 T sweetened coconut flakes for snack topping
Add ingredients in order listed to a 10 oz or larger glass container, stir and cover tightly. Leave in refrigerator for 6 hours or overnight. Top banana slices with 1 -2 tsp of prepared oatmeal, add chopped pistachios and coconut or topping of your choice.
