That can of chickpeas in your pantry will come in handy for this simple and delicious sandwich spread. Avocados are plentiful and on sale right now at the grocery store, so this was an economical ingredient match up. Pistachios are a hot commodity at our house around holiday time, I was surprised to discover that we still had a bag stashed away in the cupboard. A handful were put to good use as a salty and crunchy topping for this spread, the remainder may make their way into a cookie, stay tuned.
Avocado Chickpea Spread

- 1/2 ripe avocado chopped
- 1/2 c chickpeas cooked or drained and rinsed from a can
- 1 tsp lime juice
- 1 small clove garlic
- 1/2 tsp olive oil
Combine above ingredients put in processor or smash with a fork. Refrigerate any leftover up to a week.
