Radishes - May Farmer's Market Ingredient

Due to our slow start to the growing season, radishes are the mainstay at our market right now.  Fortunately, they are available throughout our market season.  I tried this braised radish recipe and we will plan to make it again. The sweetness of the balsamic reduction was a nice compliment to the spice of the radish. I will add more radish recipes throughout this month. 

Radishes may surprise you with their nutritional benefits.  According to Self Nutritional Data, "This food is low in Saturated Fat, and very low in Cholesterol. It is also a good source of Riboflavin, Vitamin B6, Calcium, Magnesium, Copper and Manganese, and a very good source of Dietary Fiber, Vitamin C, Folate and Potassium."
