Sour Cherry Oatmeal Bake
Cherry season a cause for celebration around our house. From the time when their delicate blooms appear to in spring until harvest the anticipation builds. Then, the fourth of July weekend approaches and we are ready with our buckets and cherry pitter to get to work, and depending on the time of day, mosquito netting too.
This recipe was inspired by a baked oatmeal recipe by Happy Healthy Mama that I have been making for a few months now. Because it is free of added sugar and makes a great on the go breakfast or snack it has become quite popular at our house.
Sour Cherry Oatmeal Bake

- 1 1/2 c fresh or thawed sour cherries (strawberries or blueberries work too)
- 2 T honey
- 1/3 c milk, I used almond milk
- 2 1/4 c rolled oats
- 1/2 tsp salt
- 1 tsp baking powder
- 1 egg
- 1 tsp vanilla extract
- 2 very ripe bananas
- 1/2 c unsweetened coconut flakes (optional)
Preheat oven to 375 degrees and grease an 8"x 8" pan
In a food processor, pulse together honey and cherries and set aside.
In a medium sized bowl, mash together bananas. Add egg and vanilla and stir together. In a separate bowl mix together oats, salt, baking powder and coconut flakes. Add cherry and honey mixture and stir until combined. The mixture will be wet. Place in pan and bake for 20-22 minutes until edges are golden brown.
