Yes, oats are traditionally a breakfast grain but I see no reason why they can't be used for savory lunchtime recipes as well. You could also marinate strips of carrot or spinach once asparagus season has passed.
Savory Overnight Oats

- 1/4 c oats
- 1/4 c almond milk, regular milk works too
- 1/2 c plain Greek yogurt
- 1/2 tsp ground turmeric
- 1 T minced green onions
- 1 stalk of asparagus, sliced into strips using a vegetable peeler
- 1 tsp fresh lemon juice
- 1/8 tsp black pepper
- 1 tsp olive oil
- 1 T chopped pistachios for garnish
Combine oatmeal, yogurt, milk, turmeric, pepper and green onions into a lidded jar with a 1 c capacity. In another container add lemon juice, asparagus and olive oil. Place both in the refrigerator overnight combine and top with pistachios.
