Apparently the options really are limitless for ingredient combinations to use in an oatmeal bake. Including sweet dates with the added zing of ginger is what sets this apart of from my other versions.
Date & Pecan Oatmeal Bake

- 2 1/4 c oats
- 4 pitted dates, chopped into 1/4" pieces
- 2 tsp freshly grated ginger
- 1/2 chopped pecans
- 1/2 c unsweetened coconut flakes
- 2 c milk
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp baking soda
- 2 T maple syrup
Preheat oven to 375 degrees, grease an 8" baking dish.
In a large bowl combine the oats, coconut, salt, baking soda and pecans. In a separate bowl, combine milk, ginger, dates, vanilla extract and syrup. Add the wet ingredients to the dry and add to the prepared pan.
Bake for 22-25 minutes until edges are brown.
