Sweet potatoes are turning out to be an easy ingredient to work into some of my favorite recipes. The combination of chickpeas and sweet potatoes makes a quick and nutritious spread. Chickpeas are a pantry staple for our house, they are a great source of protein and their mild flavor makes them an easy addition to most recipes. This spread works well spread on a a toasted English muffin or added to a sandwich or wrap.
Smashed Sweet Potatoes
By Inspired by the Seasons
- 1 c roasted sweet potato, mashed
- 3/4 c chickpeas cooked or rinsed and drained from a can
- 1/2 tsp cayenne pepper
- 1 T chopped pistachios
- Olive Oil
Blend sweet potatoes, chickpeas and cayenne pepper together adding olive oil as necessary to achieve a smooth consistency. Top with chopped pistachios and avocado.
