Pecan Cheese Ball

I like how easy this cheese ball recipe is to make a day ahead of time and how these simple ingredients come together in one tasty appetizer.  Cheese balls have made a comeback in the last couple of years, and why not? It is easily adaptable to ingredients you probably already have in your house.  I have seen versions with blue cheese and bacon, feta and pine nuts and a spicy one with pepper jack cheese rolled in crushed up tortilla chips.  I hope you have fun discovering all the tasty options that this appetizer has to offer.

Pecan Cheese Ball

Adapted from Creme de la Crumb

  • 8 ounces cream cheese
  • 2 c shredded white sharp cheddar cheese
  • 1/2 c finely chopped pecans
  • 3 green onions finely chopped white & light green parts
  • Crackers for serving

In a large bowl mix together cream cheese, green onions and cheddar with a hand held mixer.

Lay a 2' long piece of plastic wrap on your counter.  Scoop the cheese mixture onto the middle of the plastic wrap.  Wrap the plastic around the cheese mound, then use your hands to corm it into a ball.  Chill for one hour minimum.

Unwrap the cheese ball and using small handfuls of nuts at a time, press the chopped pecans onto the outer surface of the cheese ball.  No need to cover the bottom with the nuts. 

Serve with crackers.
