Pumpkin Oatmeal Bake
I know, I know, ANOTHER oatmeal bake recipe?? After changing up my sour cherry version to blueberry, raspberry and applesauce I thought I might be done with all the possible variations to my morning favorite. But then comes along the annual virtual pumpkin party and I felt it was a good excuse to incorporate that fall favorite into my oatmeal bake recipe. This is best enjoyed still warm from the oven with a topping of maple syrup and/or a dollop of vanilla yogurt,
Pumpkin Oatmeal Bake

1 c pumpkin from a can
2 T maple syrup
1 egg
1/2 tsp vanilla extract
2 c rolled oats
1/2 tsp salt
1 tsp pumpkin spice (cinnamon is great too)
1 tsp baking powder
2 ripe bananas
2 T Pepitas (optional)
Preheat oven to 375 degrees. Coat the inside of an 8"x 8" baking dish with butter or vegetable oil.
In a food processor blend together the pumpkin, egg, vanilla and bananas until combined.
In a medium sized bowl, mix together the oats, baking powder, pumpkin spice or cinnamon if using and salt. Stir in pumpkin mixture and transfer to baking dish. Top with Pepitas if using. Bake for 25 minutes until the edges get brown. Let coo; in pan for 10 minutes. Cut into 9 pieces serve with maple syrup or a dollop of yogurt topped with syrup as pictured below.
