Spiral Beet & Cucumber Salad

First beet harvest of the season coincides with the arrival of a new kitchen gadget.  I am pretty minimal when it comes to kitchen gadgets, this is partly due to having a smaller kitchen and partly due to being stubborn.  Why do I want another thing anyway? There are occasions when impulse buying wins out and this new device was one such time.

I have admired the other gadgets out there that turn all sorts of vegetables into spirals but this one was especially appealing to me since it could keep those beet juices from spraying all over the counter.  Win!

Spiral Beet & Cucumber Salad

  • 2 medium sized cucumbers thinly sliced.
  • 2 medium beets, you can slice them as well if you don't do the spiral cutter thing
  • 2 T fresh chives
  • 2 T crumbled feta cheese, more never hurts
  • 1/4 c pepitas 
  • 1 T olive oil
  • 2 T apple cider
  • 1/4 salt, more to taste

Bring a saucepan about half way full with water to a simmer.  Drop the beets (sliced or curly) into the water and cook for 5 minutes.  Drain and drop into a bowl of ice water.  Drain off the ice water and add to bowl with 1/2 the dressing.  Take the cucumber slices and place them in another container with the remaining dressing. Leave in refrigerator for 30 minutes.  When ready to serve, toss all ingredients into a bowl and serve. You can skip the step of separating the beets and cucumbers, just keep in mind that the cucumber will take on a pink hue.
