Radish Salsa

From time to time, I am stumped by what to call a recipe and this one is a perfect example.  I created a radish, cucumber, green onion combination after a recent trip to the farmers' market.  The result was so tasty, I knew I had to get this on the blog which meant it needed a name.  My first thought was Radish Relish because I love an alliteration and haven't had many opportunities to incorporate them.  It turns out that relish is more of a pickled thing.  Next came picante, but this recipe has no spice to it.  I ended up going with my "phone a friend" option which is technically an email I send to a fellow Wisconsin Whisk member who helps me out in such situations. She suggested salsa, sounded good to me and she assured me that there is not a tomato only rule with salsa.  And this is how a very simple recipe had a rather complicated naming process.

Radish Relish

  • 1/3 c chopped cucumber
  • 3 chopped green onions
  • 1/2 c chopped radishes
  • 1 T lime juice

Toss the above together in a lidded container.  Refrigerate 30 minutes before serving.  Keep refrigerated for up to a week keeping in mind that the radish will give it a pink hue the next day.
