Spinach Goat Cheese Dip

Appetizer season is upon us, or maybe it is just me? Holiday cookies are great and all but appetizers are a perfect way to sample all sorts of food while hopefully, not spoiling your holiday dinner. I always look forward to exploring new ways to adorn a cracker or crostini.   The inspiration for the dip originated with the need to use up some aging fresh spinach and goat cheese that was getting close to it's expiration date. Starting with a blend of spinach, lemon juice, olive oil and shallots, I knew something good was going to happen.
