Swiss Chard & Kohlrabi Slaw

Kohlrabi seems to be one of those vegetables that people have a hard time using up in their CSA box or if you have passed them by at your local market, I hope this recipe will encourage you to pick one or two up. Another surprise ingredient is the Swiss chard, it adds an earthy taste but in a good way..  This is an easy recipe to put together and one of those that tastes even better after a day in the fridge. 


Swiss Chard & Kohlrabi Slaw

For the dressing:

  • 3 T rice vinegar
  • 1/2 tsp honey
  • 1 T finely diced shallot
  • Pinch of Salt

 Combine all the above in a lidded container and shake to combine. 

For the salad:

  • 1 medium kohlrabi (about the size of a softball) julliened
  • 2 medium sized cucumbers sliced; should be about 2 cups
  • 2 c Swiss chard stems finely diced and leaves cut into thin ribbons

In a medium bowl combine all the above and toss with dressing.  Start with 2 T then add more to taste. This is good the same day and improves the next day.
