Energy bites are one of my favorite ways to snack between meals. They are healthy, fun to make and use a minimum of ingredients. I like my chocolate and sweets, don't get me wrong here, but sometimes I am looking for something more on a tart side and this lemon version fits the bill.
Lemon Energy Bites

- 1/2 c each pistachios and raw cashews (roughly chopped)
- 1 1/2 c dates
- 1 Lemon, zest and juice (you should have 3 T of juice)
- 1/2 tsp vanilla
- 1/2 c unsweetened coconut flakes
Add nuts to the bowl of your food processor and pulse until they resemble a coarse meal. Add dates, lemon juice and vanilla and process until the ingredients come together into a ball
In a shallow bowl, combine zest and coconut flakes. I used my fingers to mash them together to incorporate the lemon flavor into the flakes. .
Remove the date mixture from the processor and roll into balls. If mixture is sticky you can either cool it in the refrigerator for 20 minutes or wet your fingers before rolling into a ball.
Makes 16 balls. Store in refrigerator for a week.
